Chocolate Chip Oatmeal Pancakes with Strawberries

Ingredients
For the pancakes:
  • 2 large eggs
  • 150g (or 1⅔ cup) rolled oats
  • 250ml (or 1 cup + 2 teaspoons) buttermilk (or regular milk)
  • 1 tablespoon of granulated sugar
  • ¼ teaspoon of cinnamon
  • ¼ teaspoon salt
  • 3 teaspoons baking powder
  • 85g (or a heaped ½ cup) dark, mini chocolate chips, plus more to decorate
For the topping:
  • 70g strawberries
  • 1 teaspoon of sugar
  • 1 teaspoon of water
  • maple syrup (optional)
Instructions
Start with the pancakes:
  1. Whisk together the eggs, oats, buttermilk, sugar, cinnamon and salt. Let the mixture rest on the counter for 30 minutes to allow the oats to soften.
  2. Whisk in the baking powder and chocolate chips and allow to rest for another 2 minutes.
  3. In the meantime, heat a small non-stick skillet over high heat (or use a griddle if you have one) then turn the heat to low. Pour ¼ of a cup worth of pancake batter onto the skillet (I usually push it into a pancake shape with a spatula) and cook on one side until bubbles form on the top that don’t fill back in again, about 3 minutes. Flip the pancake and cook for another minute on the other side. Transfer to a warm plate.
Once the pancakes are done, make the topping:
  1. Combine the strawberries and sugar in a small saucepan. Heat over low heat, stirring until the sugar has dissolved and the strawberries are warm. Spoon the strawberry topping on top of the warm pancakes and sprinkle with some more chocolate chips. Add maple syrup if you want to. Enjoy!
